Instant Pot Creamy Asparagus and Bacon

Ingredients

  • 1 tablespoon butter
  • 2 pounds asparagus, trimmed and cut into 2” pieces
  • 8 ounces cream cheese, softened
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon pepper
  • 5 cloves garlic, minced
  • 1 1⁄2 cups vegetable broth
  • 1⁄4 cup shredded parmesan cheese
  • 1⁄4 cup cooked crumbled bacon
  • 1 tablespoon cornstarch, dissolved in ¼ cup water

Directions

  • In Instant Pot, combine butter, asparagus, cream cheese, salt, pepper, garlic and broth.
  • Set Instant Pot on high for 2 minutes. Turn to quick release.
  • Stir in parmesan, bacon and cornstarch slurry until cheese is melted and thickened.
