Creamy Pumpkin Fettuccini Alfredo

- 1 pound fettuccini
- 1 tablespoon butter
- 1 teaspoon garlic
- 1⁄2 pumpkin puree
- 2 cups heavy cream
- 1⁄4 teaspoon coarse salt
- pinch ground nutmeg
- 3⁄4 cup grated Parmesan cheese
- Cook pasta according to package directions; drain, reserving 1 cup pasta water.
- In a large skillet over medium heat melt butter. Add garlic; cook 1-2 minutes until fragrant. Whisk in pumpkin, cream, salt and nutmeg; bring to a bubble and cook 3-5 minutes until slightly thickened. Whisk in cheese until melted.
- Toss pasta in sauce, adjusting consistency with pasta water as needed. Adjust seasoning to taste.
- Refrigerate leftovers.
