Creamy Pumpkin Fettuccini Alfredo

  • 1 pound fettuccini
  • 1 tablespoon butter
  • 1 teaspoon garlic
  • 1⁄2 pumpkin puree
  • 2 cups heavy cream
  • 1⁄4 teaspoon coarse salt
  • pinch ground nutmeg
  • 3⁄4 cup grated Parmesan cheese


  • Cook pasta according to package directions; drain, reserving 1 cup pasta water.
  • In a large skillet over medium heat melt butter. Add garlic; cook 1-2 minutes until fragrant. Whisk in pumpkin, cream, salt and nutmeg; bring to a bubble and cook 3-5 minutes until slightly thickened. Whisk in cheese until melted.
  • Toss pasta in sauce, adjusting consistency with pasta water as needed. Adjust seasoning to taste.
  • Refrigerate leftovers.
