Butternut Squash Chili

You won’t even miss the meat in this hearty vegetarian chili.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • 1 red bell pepper, chopped
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons cocoa powder
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1/2 teaspoon ground cayenne pepper
  • 1 can (28 oz.) diced tomatoes with juices
  • 4 cups vegetable broth
  • 2 cans (15 oz.) black beans, drained and rinsed
  • 1 butternut squash, peeled and diced (about 3 cups)

Directions

  • In a 4 quart pot over medium heat add oil, onion, garlic, pepper, salt and pepper. Cook 2-4 minutes until softened. Add tomato paste, cocoa powder, chili powder, cumin and cayenne; cook 1-2 minutes.
  • Add tomatoes, broth, black beans and butternut squash; bring to a boil and reduce heat to low. Cover and simmer about 30 minutes or until squash is tender; adjust seasoning to taste. Garnish as desired.
  • Refrigerate leftovers.
