Ingredients:
- 2
cups of your favorite vegetables (try mushrooms,
zucchini, asparagus and bell peppers)

1 Tbsp olive oil
- 1
pint half-and-half
- 10
eggs
- salt,
to taste
- ground
black pepper, to taste
- 6
slices of your favorite bread
- 1
lb. bacon or sausage, cooked and crumbled
- 1
cup cheddar cheese, grated
- 1/2
cup scallions, sliced
Directions:
- Sauté
vegetables in 1 tablespoon of olive oil. Season
with salt and set aside.
- Whisk
half-and-half, eggs, salt and pepper until smooth.
Prepare a 9"x13" pan with cooking
spray.
- Line
bottom of pan with 3 slices of bread. Scatter
half of the bacon or sausage, vegetables, scallions
and cheese over bread. Pour 1 cup of egg mixture
over the top. Repeat layers with remaining bread,
bacon or sausage, vegetables, cheese and scallions.
Pour remaining egg mixture evenly over top.
(Can be refrigerated overnight.)
- Bake
in preheated 325°F oven until custard is
just set, about 60 minutes. Let stand for 8-10
minutes. Serve immediately.
