Ingredients:
- 1 pkg Hollandaise sauce
- 1 cup milk
- 1/4 cup plus 2 Tbsp butter
- 6
eggs, beaten
- salt and pepper, to taste
- 4 English muffins, split
- 8 slices Canadian-style bacon,
sliced
Directions:
- Prepare Hollandaise sauce with
milk and butter as directed. Keep warm.
- Combine eggs, 1/3 cup prepared
Hollandaise sauce, salt and pepper. Toast English
muffins. Heat Canadian bacon slices in microwave.
In a medium skillet melt butter; pour in egg
mixture. Cook without stirring until mixture
just begins to set. Mix in skillet. Continue
cooking until eggs are cooked. Remove from heat.
- Place Canadian bacon on English
muffins. Spoon egg mixture on top of bacon.
Top each with Hollandaise sauce.
