Easy Eggs Benedict

Easy Eggs BenedictIngredients:

  • 1 pkg Hollandaise sauce
  • 1 cup milk
  • 1/4 cup plus 2 Tbsp butter
  • 6 eggs, beaten
  • salt and pepper, to taste
  • 4 English muffins, split
  • 8 slices Canadian-style bacon, sliced

Directions:

  • Prepare Hollandaise sauce with milk and butter as directed. Keep warm.
  • Combine eggs, 1/3 cup prepared Hollandaise sauce, salt and pepper. Toast English muffins. Heat Canadian bacon slices in microwave. In a medium skillet melt butter; pour in egg mixture. Cook without stirring until mixture just begins to set. Mix in skillet. Continue cooking until eggs are cooked. Remove from heat.
  • Place Canadian bacon on English muffins. Spoon egg mixture on top of bacon. Top each with Hollandaise sauce.

Serves 4
