I really love this creamy soup, and in summertime, turn this recipe into roasted corn soup. Use grilled corn, and slice off the cob!


  1. 1 Tablespoon Butter
  2. 2 Tablespoons Celery, chopped
  3. 2 Tablespoons Onion, chopped
  4. 2 Tablespoons Green Bell Pepper, chopped
  5. 2 Cups Fresh Corn, sliced off the cob
  6. 1 Cup Potato, diced
  7. 1 Cup Chicken Broth
  8. 1/4 Teaspoon Paprika
  9. 1 Teaspoon Salt and Pepper, to taste
  10. 2 1/2 Cups Milk, divided
  11. 2 Tablespoons Flour


  • In a medium saucepan, melt butter over medium-high heat. Add celery, onion, green pepper and corn. Sauté for 2 minutes.
  • Add potatoes, chicken broth, paprika, salt and pepper. Bring to a boil; reduce heat to medium and cook, covered, about 10 minutes or until potatoes are tender.
  • Mix 1/2 cup milk with flour. Slowly mix into hot soup. Add rest of milk, and bring to a boil to thicken.
