Ingredients:
1 pound boneless skinless chicken breast, cut into thin strips
1/2 cup red onion, thinly sliced
1/2 cup apple, thinly sliced
2 tablespoons pine nuts
1 tablespoon raisins
2 avocados, sliced
8 cups mixed salad greens
1 tablespoon Dijon mustard
3 tablespoons olive oil, divided
1 tablespoon white wine vinegar
1/2 teaspoon sugar
1 teaspoon dill weed

Directions:
- Heat 1 tablespoon olive oil in a skillet. Sauté chicken strips for 1-2 minutes until no longer pink.
- Toss red onion, apple, pine nuts and raisins. Mix well. Add chicken and avocado.
- In a small bowl, mix mustard, olive oil, vinegar, sugar and dill weed. Toss with greens. Plate greens and top with avocado chicken mixture.
