Cascading Red Asparagus Bean
Also known
as yard long beans. Vigorous, disease resistant
vine type variety. Has a texture of green beans
with a sweet taste. Produces Red Asparagus Beans
that are 1/4" in diameter and up to 24" long.
Exceptional quality.
Asparagus Beans Delight
- 1/2 lb. Asparagus Beans, cut into 1" sections
- 2 t. butter
- 1 t. each of fresh chopped thyme and oregano
(or other fresh herbs of your choice)
- 2 cloves of garlic
- 1/4 t. salt
- freshly squeezed lemon juice
Cook Asparagus
Beans in boiling water for 5 minutes or until
just tender to the bite. Meanwhile, finely mince
garlic cloves with fresh herbs. Drain Asparagus
Beans. Heat the butter in a frying pan until melted,
add the asparagus beans, salt and minced garlic
and herbs; sauté for 30 seconds. Squeeze
fresh lemon juice on the Asparagus Beans just
before serving.
