Champion Stem Lettuce

Although strange looking, this vegetable is a form of lettuce that is bred for its elongated stem. It is easy to grow and versatile in cooking. It has a mild flavor and crunchy texture. Marinate with salt and vinegar and a hint of sesame seed oil or use in stir-fries.

Garlic Chicken with Stem Lettuce

  • 8" section of stem lettuce, peeled and cut into thin long strips
  • 6 oz. Chicken breast meat, cut into strips
  • 3 dry red peppers
  • salt
  • 3 T oil. Sauce

Mix together 2 T. soy sauce, 2 tsp. balsamic vinegar, 1 T. dry sherry, 1 T. Sugar, 1 cutup green onion, 1 T. cornstarch and 5 cloves crushed garlic. Moisten the chicken strips with some of the sauce, set aside. Heat 2 T. oil in a pan until hot; cook red pepper for 30 seconds. Add chicken strips, stir-fry until all chicken turns white (1-2 min.). Remove chicken from pan. Heat 1 T. oil in pan, add stem lettuce and salt, stir-fry for 30 seconds. Pour sauce in pan, cook until sauce begins to thicken, add chicken strips, and toss to coat. Serve hot over rice.
